Cookies made with Extra Virgin Olive Oil and Orange juice – Portokalokouloura

Ingredients :
  • 0.44 pounds  - 200 gr olive oil
  • 120 gr orange juice
  • grated zest from 1 orange
  • 1/4 pounds  - 200 gr granulated sugar
  • ½ cup cognac
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • 1.3 pounds  - 600gr flour
  • a generous amount of sesame seeds, optional
If you do not want to use 1/2 cup of cognac you can substitute cognac with orange juice. Directions :
  • Preheat oven to 180* C (350* F) Fan.
  • Combine the olive oil, orange juice, orange zest, sugar and cognac in a bowl using a hand whisk.
  • In a larger bowl, add the flour and all of the remaining ingredients apart from the sesame seeds. Mix with a spoon.

Cookies with Olive Oil

  • 1 and 2/3 of a cup  Katerina's Finest Olive oil
  • 1 and 2/3 of a cup orange juice
  • 1 and 1/3 of a cup sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon groung clove
  • about 2 pounds of flour
Directions Mix/blend well the olive oil and sugar. Take 1/4 cup of the orange juice, add the baking soda and mix it well. Then add it at the olive oil and sugar mix. Start adding the rest of the remaining ingredients. Add flour last and gradually. The dough should not stick on your hands when you try to knead the cookies.  Bake for 25 minutes of until golden brown at 350 F. Do not over bake the cookies because they will dry out. Source    ...
