Ingredients:

2 cup rolled oats

2 medium sized bananas

1 cup of milk OR Greek yogurt 0% or 2%

1/3 cup maple syrup

½ cup of cocoa powder

2 eggs

1 teaspoon vanilla

1 teaspoon cinnamon

1 teaspoon baking soda

½ cup applesauce (optional)

¼ cup chocolate chips OR ¼ cup nuts

Directions

Preheat oven at 375 F and grease your muffin cups.

Place the oats in a food processor or blender and grind till it resembles a coarse flour.

In a bowl mix all the ingredients except the chocolate chips or nuts. (I used Greek yogurt this time and I did add the applesauce)

Wisk until smooth. Fill up to ¾ the muffin cups.  

Bake for 20 to 22 minutes or until firm to the touch. Let cool in a pan for about 5 minutes and then transfer to a wire rack to cool.

You can also make this with gluten free oatmeal.
