- 1 and 2/3 of a cup Katerina’s Finest Olive oil
- 1 and 2/3 of a cup orange juice
- 1 and 1/3 of a cup sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon groung clove
- about 2 pounds of flour
Mix/blend well the olive oil and sugar. Take 1/4 cup of the orange juice, add the baking soda and mix it well. Then add it at the olive oil and sugar mix. Start adding the rest of the remaining ingredients. Add flour last and gradually. The dough should not stick on your hands when you try to knead the cookies. Bake for 25 minutes of until golden brown at 350 F. Do not over bake the cookies because they will dry out.
