Raisin paste cookies
  • 1 cup raisins
  • 2/3 cup sugar
  • ½ cup Extra Virgin Olive Oil
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp ground clove
  • ½ cup honey
  • A pinch of salt
  • 3 cups of flour (you might need a bit  more or less depending of the brand that you will use)
  • ¼ cup or orange juice if the dough gets tough

This recipe has 2 parts to follow.

1st one: Soak the raisins overnight in water. Place the soaked raisins in a pot. Poor some water in the pot and bring it to a boil for about 10 minutes. Turn off the heat. When the raisins cool off blend them in a blender.

2nd one: In a bowl mix for about 5 minutes the sugar and olive oil. Add all the above ingredients in the olive oil and sugar mixture minus the flour and orange juice.  

Add the flour one cup at a time. Mix well. If the dough gets tough to work with add a bit at a time some of the orange juice. The dough has to have a firm consistency so you can form the cookies. If it is too sticky to work with dip your fingers in olive oil. That will help. It did for me!

Bake the cookies for about 20 minutes at 350 °F. Enjoy!
